Fish in the oven
Ingredients:
1 kg of white fish fillets (e.g. cod, hake, pike-perch)
2 lemons
3-4 cloves of garlic
4 tbsp. olive oil
1 tsp. dried oregano
1 tsp. dried thyme
Salt and pepper to taste
Fresh parsley for decoration
1 large tomato (optional)
1 onion (optional)
100 ml of white dry wine (optional)
Instructions:
Fish preparation:
Rinse the fish fillets under cold water and pat dry with paper towels.
Salt and pepper the fish on both sides. Preparing the marinade:
In a small bowl, combine the olive oil, juice of one lemon, crushed garlic, oregano, thyme, salt and pepper.
Place the fish fillets in a deep dish and pour the marinade over them.
Allow to marinate for 20-30 minutes. Preparing the vegetables (optional):
Slice the onion into half rings and the tomato into circles.
Preheat the oven to 180°C. Place the fish fillets on a baking tray greased with olive oil. Pour the remaining marinade over the fish.If using vegetables, arrange the onions and tomatoes on top of the fish.If you like, add white wine by pouring it around the edges of the baking tray.
Slice the second lemon into circles and lay them on top of the fish.Bake the fish in the preheated oven for about 20-25 minutes, or until the fish is soft and easily flaked with a fork.
Garnish the finished fish with fresh parsley. Serve with a garnish of your choice, such as rice, potatoes or fresh salad.
